Oatmeal Chocolate Chip Cookies
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup sugar and
1/2 cup brown sugar
1 large egg, room temp.
1/2 teaspoon vanilla extract
1 cup oats
1 cup chocolate chips, more or less.
Preheat oven to 350°
In the first bowl, mix the flour, salt, and baking soda.
In a second, slightly larger bowl, cream the butter and sugar together for about 3 minutes, or until they become one.
Add the egg and vanilla to the butter/sugar. Mix.
Add the flour mixture and beat. Thoroughly.
Stir in the oats and chocolate chips.
Taste the cookie dough.
Drop by teaspoons onto the baking sheet,
they will expand slightly to perfect cookie size, so leave a little room.
Bake for about 8 - 10 minutes, or until lightly golden brown around the edges.
MAKES 2 to 3 DOZEN COOKIES
